“I can do all things through Christ who strengthens me” Phil 4:13
My journey to become an RD happened almost accidental, seriously, you see, this road block (a huge boulder) was in the middle of my oh so complicated road I was on and had been on for a really long time. I can’t really explain it, but I got tired of being tired all the time, I got tired of everybody around me being tired and unhappy all the time. I decided it was time to get off that road and try a different one. Because Lord knows the one I had been on for the past 25 years had been full of immense joy but also immense pain. So, one day I took a deep breath and jumped hoping my loving and gracious God would catch me and guess what, He did.
My story, like most others is not all that special (although it is filled with incredibly special people) and its not that amazing (although some amazing things have happened!!), but it is my story and I would like to share it with you in hopes that you will be inspired to reach for the stars and never ever stop believing in yourself. For all of you out there that think you are not smart enough, not good enough, not rich enough to become an RD I am here to tell you that yes you are. Becoming an RD is hard work, it will almost break you and at times you will feel like giving up, but you can do it. It may well be the hardest thing you ever do in your life, but it will be the most rewarding, best thing you ever do as well. Don’t give up, ever. Realize your dreams and make them happen.
I divorced and went back to school the summer of 2013 at the age of 47. I had been married for 22 years and had three awesome kids, ages 20, 17 and 15. Their dad decided to move home to another state pretty far away to be close to family and help take care of his parents. So, I was pretty much left on my own to figure it all out and try to decide what I wanted to do with the rest of my life. I was working two jobs, killing myself and barely making ends meet, my two teenagers were just barely surviving as well. That’s when I decided I should go back to school and earn a degree in Dietetics. Honestly, I don’t know what I was thinking, I was the girl who earned a BA in English in 1987 and barely passed astronomy, (the only science class I actually ever took) but here I was on a college campus signed up for two classes with a bunch of people my children’s age because I loved to cook and I thought being a Dietitian meant I would learn how to cook healthy meals for people. What an adventure it has been. I am so incredibly thankful for all the people God has put in my path to help me become a Registered Dietitian. I have an enormous appreciation and love for the science of nutrition. It is forever changing and growing. I never want to stop learning. I want to share my new found knowledge with anybody who will listen. Our bodies are amazing machines that continue to work despite our best efforts to dismantle and disable them at every turn with the foods we eat and the lifestyles we live, but I have learned our bodies are resilient and will bounce back at the slightest positive change. Lose just 10% of your body weight and watch your blood pressure drop, your A1c go down a notch and your Triglycerides get within normal range. Adding foods to your diet rich in antioxidants like blueberries and carrots help to boost your immune system immediately. The awesome power of food on our health is truly amazing. The fields of nutrigenetics and nutrigenomics are an emerging science focused on the relationship between human genes and nutrition. … DNA Health Testing for Nutrigenetics looks at specific genes in our DNA that may be susceptible to disease and suggests that making small differences in the foods we eat every day can possibly alter our DNA for future generations. Wow! Pretty cool stuff!
Science is complicated, but choosing the right foods to live a full and healthy life shouldn’t be. I would like this site to be your go to when you need inspiration to feed your family nutritious, healthy meals that are not complicated and easy to prepare. My mission is to make your life less complicated one meal at a time. Come join me, grow with me and explore the endless possibilities in the wonderful ever-changing world of nutrition.
Joy,
